Cooking to regenerate: why our kitchen is 100% plant-based

The common-good economy, circularity and the regenerative economy can sound like theory. At El Michi we bring them down to something very concrete: what we serve on the plate.

When we opened El Michi, we had one clear idea: to be a driver of change from the kitchen. We didn’t just want a pretty spot by the sea in Puerto de la Cruz, but a place that proves, plate by plate, that another way of eating and doing business is possible.

Three ideas that inspire us

  • Common-good economy: measuring success not only in euros, but in what we give back to people and the environment.
  • Circularity: thinking about the full cycle of what we use, to create less waste and make the most of everything.
  • Regenerative economy: not settling for “doing less harm”, but trying to leave things a little better than we found them.

Why 100% plant-based

We chose a fully plant-based menu because we believe animal suffering must end, and because nourishing, tasty, memorable food doesn’t need animal ingredients. Our açaí bowls, pokes, wraps and Sunday brunch prove it every day.

A fairer, more sustainable world isn’t just possible: it also tastes great.

Ideas to bring it into your kitchen

  • Plan your weekly menu: you buy what you need and waste less.
  • Make legumes your base: chickpeas, lentils and tofu work in a thousand recipes.
  • Use up leftovers: a bowl or a wrap is the perfect excuse.
  • Cook with seasonal produce: it tastes better and is usually more local.

And if one day you don’t feel like cooking, you know where to find us: Av. Betancourt y Molina 33, just a few steps from Lago Martiánez.
